Orange and Cocoa Cake with Pistachio
You will love this moist, softy and flavor orange cocoa cake. I serve with condensed milk sauce that gives it a very rich taste.
Prep time: 15-20 minutes
Bake time: 35-40 minutes
INGREDIENTS:
- 4 eggs (at room temperature) 
- 400 gr flour 
- 200 gr granulated sugar 
- 200 ml vegetable oil 
- 250 ml milk (at room temperature) 
- 70 gr unsweetened cocoa powder 
- 1 envelope baking powder 
- ½ tsp salt 
- 1 tsp vanilla extract 
- 1 orange zest 
- 2 tbsp chopped pistachio 
For the Sauce:
- 1 egg yolk 
- 300 ml condensed milk 
- 100 ml whipping cream 
INSTRUCTIONS:
For the Sauce:
- Whip the heavy cream for a couple of minutes until thick consistency and set aside. 
- Mix the condensed milk with egg yolk on medium heat until comes to boils. Let it cool. 
- Add the cream into the egg-cond.milk mixture and mix them to combine. 
For the Batter:
- Combine sifted flour, cocoa powder, baking powder and salt in a large bowl. Whisk thoroughly to combine well. 
- Beat well the eggs with sugar until looks creamy. 
- While the whisking continues add the oil and milk in order. 
- Put the dry ingredients into the wet mixture in 3 steps. Mix them until only combined. 
- Add the orange zest and vanilla extract and mix a few second. 
- Preheat oven to 180C/350F 
- Grease the 10”(26cm) round cake pan with butter and sprinkle some flour to avoid from sticking and tap to the cake pan lightly to remove the excess flour. 
- Pour the batter into the pan and bake for it 35-40 minutes. Until toothpick comes out clean. 
- Serve with sauce and pistachio.
