Chocolate Almond Cake
Gluten free, soft and moist almond cake with chocolate.
Prep Time: 15 minutes
Bake Time: 30 minutes
INGREDIENTS:
- 100 gr almond flour 
- 4 eggs (white and yolk separated) (at room temperature) 
- 200 gr dark&milk chocolate 
- 150 gr butter 
- 100 gr granulated sugar 
- ½ tsp vanilla extract 
- A pinch of salt 
- Cocoa powder (for sprinkle) 
INSTRUCTIONS:
- To prepare a round spring pan (23cm/9”), grease the sides with some butter and line the side and bottom with baking sheet. 
- In a bowl, melt the chocolate and butter together with bain-marie method. 
- Whisk egg yolks with half of the sugar until creamy and light 
- Add the sifted almond flour, melted chocolate & butter and vanilla extract into the egg yolks mixture then mix. 
- Beat the egg whites with salt and the remaining sugar until soft stiff peak. 
- Preheat oven at 180C/356F 
- Fold the whites into the batter 3 times with spatula until just combined. 
- Pour the batter to the pan and bake for 30 minutes. 
- After cooled the cake sprinkle some cocoa powder on it.
