Berries Chocolate Chip Spoon Cake
INGREDIENTS:
- 115 gr butter (at room temperature) 
- 120 ml milk 
- 100 gr light brown sugar or coconut sugar 
- 150 gr berries (strawberry, blackberry) 
- 170 gr almond flour 
- 30 gr coconut flour 
- 2 eggs 
- 2 tbsp coconut oil 
- 100 gr chocolate chips 
- 1 tsp vanilla extract 
- 1 tbsp cornstarch 
- 1 tbsp lemon zest 
- 1,5 tsp baking powder 
- A pinch of salt 
INSTRUCTIONS:
- Softly mash the berries to release all their juices and stir in 1/3 of sugar and starch. Set aside. 
- Into a mixing bowl, beat the butter and the remaining sugar until creamy 
- Add the coconut oil, eggs, milk in order while the mixer is running 
- Put sifted flour (either all almond flour or mix), baking powder, lemon zest, salt and vanilla extract. Mix them just until the batter is smooth 
- Once mixed fold in chocolate chips 
- Transfer the batter to the greased baking dish (20 cm, 8”) and spread evenly 
- Spoon the berries and all their juices over the top of the batter 
- Bake in the preheated oven at 175C (350F) for 30-35 minutes until golden brown 
- Serve warm or not with ice cream
